What You Need
· Heavy cream (also known as heavy whipping cream)
· A jar with a tight-fitting lid or a stand mixer/hand mixer
· Salt (optional)
· Cold water
· Bowl and spoon or spatula
Step-by-Step Instructions
Pour the cold heavy cream into your jar or mixing bowl. Fill the jar only halfway to allow room for shaking.
Shake or Whip:
If using a jar, screw the lid on tightly and shake vigorously for 5–10 minutes. If using a mixer, beat the cream on medium-high speed.
First, you’ll see whipped cream form. Keep going until the cream separates into a yellow butter lump and thin, milky liquid (buttermilk).
Pour off the liquid (buttermilk). You can save this for baking if you like.
Wash the Butter: Pour cold water over the butter in the bowl. Press the butter with a spoon or spatula to squeeze out any remaining buttermilk. Drain and repeat until the water runs clear.
Add Salt (Optional): If you prefer salted butter, mix in a pinch of salt to taste.
